Cooking Instructions:

Rinse and soak the little millet flakes.

Place the Little Millet flakes in a large bowl and rinse them thoroughly with cold water. Drain the water.
Add enough water to the little millet  flakes to cover them, and allow them to soak for about 5–10 minutes. The flakes will absorb the water and become soft, but they should not be mushy. After soaking, drain any excess water.

Prepare the seasoning.

Heat a pan with some cooking oil over medium heat.
Add mustard seeds, and when they start to splutter, add curry leaves and green chilies (if using).

Sauté onions and vegetables (optional):

If you’re using onions, add them to the pan and sauté until they become translucent.
Add the chopped vegetables and cook them until they are slightly tender. You can use vegetables like peas, carrots, or potatoes.

Add Spices:

Sprinkle a pinch of turmeric powder and salt over the sautéed onions and vegetables. Stir to coat them evenly.

Add little millet flakes:

Add the soaked and drained flakes to the pan. Gently mix them with the sautéed vegetables and spices. Cook for a few minutes, allowing the flavors to meld together.

Garnish and serve:

If desired, garnish the dish with freshly grated coconut, chopped coriander leaves, and a drizzle of lemon juice for added flavor.

They can be served hot and are often enjoyed for breakfast or as a light, healthy snack.
